To make coconut icing you must ground the flour until it is very soft, like the almond flour used to make marzipan, only that almond flour is more pliable: Solid coconut icing can only be pressed into shape while almond paste can be moulded. Recipe: Add a large tablespoonful of icing sugar and a teaspoon of lemon juice to the white of egg and shake vigorously Take 3 table spoons of this mixture and keep it in a coffee cup sealed with transparent kitchen film. You will need this to make decorations like leaves, berries and flowers. Mix the soft paste made from coconut flour to the rest of the mixture and knead it until it becomes a soft paste which you can flatten with a rolling- pin. Remember to always roll out the mixture between two sheets of kitchen film or oven paper. Make the table place names with moulds or by hand and leave them to dry for two days. The balls that you see in the photo above have been made with the ingredients for normal icing mixed with coconut flour bought commercially. 3. La glassa solida al cocco fine richiede di macinare la farina sino a ridurla a una massa morbida molto simile a quella delle mandorle macinate per fare il marzapane ma la differenza sta nella loro duttilità: la glassa solida al cocco puoi solo premerla per darle una forma, mentre quella alle mandorle si lascia lavorare. Ricetta: amalgama all albume 1 grosso cucchiaio da tavola di zucchero a velo con un cucchiaino di succo di limone e sbatti il tutto con vigore. Da questo composto togli 3 cucchiai e conservali in una tazzina da caffè sigillata con la pellicola. Ti servirà per creare la glassa solida per gli abbellimenti: foglie, bacche e fiori. Al composto rimasto, amalgama la pasta morbida della farina di cocco macinata e lavorala sino ad ottenere una pasta morbida d appiattire con il mattarello. Compi l operazione di appiattimento sempre tra due fogli di pellicola o di carta forno. Crea i segnaposti con le formine o a mano e lasciali asciugare all aria per 2 o più giorni. Le palline che vedi nella foto sopra, sono state fatte con gl ingredienti per la glassa solida amalgamati alla farina di cocco così come la compri. 2. First stage: coconut paste. 4 4. You can keep the coconut icing solid and soft for some days if you are careful to keep it wrapped in kitchen film and shut in a glass jar, just as with normal solid icing or almond icing. 5.
