La nostra carta dei vini è profondamente cambiata nella modalità di classificazione. Partiamo dalla rilettura della sua composizione; l intenzione è quella di mettere davanti a tutto l elemento caratterizzante del vino, il vitigno o i vitigni, che troppo spesso sono lasciati in disparte a favore di grande zone vinicole e grandi produttori. Presentiamo questa nuova carta senza i confini territoriali,lasciando che sia proprio il vitigno stesso ad identificare il territorio di provenienza. 6 LE BOLLICINE Chardonnay- Trento Metodo classico Secondo alcuni studiosi ha radici mediorientali, secondo altri nasce da un incrocio spontaneo da una vite preaddomesticata ed un vitigno illiro proveniente da quella zona che oggi corrisponde a Albania,Slovenia, Croazia, Bosnia e Montenegro. In Italia si contano circa ettari di terreno coltivato a uva chardonnay. Molto diffuso nel nord Italia,ovvero in Lombardia, Trentino Alto Adige e Friuli. TRENTODOC, unico come la terra da cui proviene: il Trentino perfetto per la produzione di metodo classico. Accanto alle montagne, ai ghiacciai eterni e alle guglie dolomitiche, infatti, si stendono infiniti vigneti, che arrivano fino agli ottocento metri sul livello del mare. Siamo nel regno del vino: una terra che racconta se stessa attraverso la natura, i colori, l ospitalità e la gioia di vivere. 7 LE BOLLICINE Chardonnay- Champagnes Montagne de Ecco che veniamo a scoprire lo Chardonnay che si esprime meglio nel suo regno Cote des blancs per via di terreni più omogenei con un profondo strato di calcare o con una percentuale di sabbia a base gessosa più a sud. Dove adesso troviamo le vigne un tempo (70 milioni di anni fa) c era il mare e quindi le radici dopo pochi centimetri di terra trovano un terreno calcareo gessoso ricco di elementi marini e minerali spesso anche 300 metri molto drenante e poroso (40% vuoto) in grado di trattenere l acqua delle abbondanti piogge invernali e di cederla nei periodi di siccità. Vitigno precoce esposto alle gelate primaverili, di buccia sottile e quindi sensibile dove il momento della vendemmia diventa cruciale perché se posticipata l uva tende a perdere velocemente la necessaria acidità. Qui troviamo straordinari chardonnay minerali e agrumati a Mesnil, densi, speziati e potenti a Cramant, puri e fruttati ad Avize, Oger con vini fini ed esclusivi. Anche nella vicina Cote de Sezane viene utilizzato lo Chardonnay dove si ottengono vini mediamente più fruttati e più rustici. Oppure a Montgueuz isola felice nella Cote de Bars, con uno chardonnay che entra spesso negli assemblaggi delle grandi Maison. 10 LE BOLLICINE Pinot nero Champagnes Montagne de L'origine del Pinot nero viene posta nella regione francese della Borgogna, dove è alla base dei più grandi vini rossi del mondo. È presente anche nella regione dello Champagne dove è il vitigno più coltivato occupando il 38 % circa della superficie vitata. Vitigno che richiede cure e attenzioni, predilige i climi relativamente freddi, terreni calcarei e pur germogliando precocemente necessita di una maturazione lunga e completa. Il suo habitat naturale è la Montagne de con i suoi pendii calcarei e sabbiosi in particolar modo nei villaggi di Ambonnay, Bouzy a sud con vini di corpo e carattere e a Verzy e Verzenay più al nord di minor struttura e maggior acidità e bella personalità. Nelle annate migliori può esprimere tutto il suo carisma fatto di potenza, frutto, carnosità e complessità. Anche nell Aube il Pinot nero è protagonista assoluto, forse in generale con espressioni un po meno eleganti e acidità più marcate probabilmente dovute al terreno chiamato Kimmerigian, lo stesso che ritroviamo nel vicino Chablis. È caratterizzata da una foglia la cui parte inferiore è decisamente lanuginosa, tanto da sembrare imbiancata di farina (meunier in francese significa mugnaio). Nello Champagne è usato come componente fondamentale nella tradizionale cuvèe; soprattutto nelle zone più fredde del territorio dove è più elevato il rischio di gelate, dà maggiori garanzie rispetto al Pinot nero perché germoglia dopo rispetto a quest'ultimo, pur garantendo un grado alcoolico equivalente. È coltivato anche in Germania, dove è chiamato Muellerrebe o Schwarzriesling, in Austria, in Svizzera, in California e in Austrialia, dove, in un primo tempo, veniva usato per produrre un rosso tranquillo. Pinot Meunier is a black variety popular in France and is most likely a mutation of Pinot Noir. 19 LE BOLLICINE Prosecco(Glera) La teoria più accreditata sull origine del Prosecco identifica questo vitigno con un vino noto ai tempi dell Impero Romano e citato da Plinio, il Pucino, probabilmente proveniente dalle colline triestine. Esistevano all inizio del 1900 parecchi biotipi di Prosecco, diffusi nell alta provincia di Treviso, abbandonati a favore del Prosecco tondo; è seguito nei ultimi anni un grande lavoro di selezione clonale finalizzato alla salvaguardia della rusticità e vigoria del vitigno che deve adattarsi, di volta in volta, a diverse esigenze agronomiche, colturali, sanitarie e enologiche.
