The fruit juices and purees that are used to make the Dreamy line are carefully selected from around the world, they are then stored in our cold cells to conserve all their freshness until they are used. 2 Raffreddamento / Chilling In fase di lavorazione la soluzione zuccherina precedentemente sciolta ad una temperatura di 85 C viene raffreddata e portata ad una temperatura di 60 C: quindi vengono versati succhi, polpe, puree e aromi. A questo punto tutta la massa viene raffreddata con un processo di raffreddamento ad acqua molto lento, fino al raggiungimento di una temperatura di 20 C. During the processing phase, the sugar solution that was previously dissolved at a temperature of 85 C is cooled down to 60 C: then the juice, pulp, puree and aromas are added. During the processing phase, the juices and purees are carefully mixed with a base of water, sugar and natural pectin, to maintain their final stability and prevent the juices separating from the other ingredients. 4 Verifica grado bx / Check bx level Prima di procedere all imbottigliamento vengono effettuate alcune prove di laboratorio tra le quali la più importante è il controllo del grado Bx cioè la determinazione in percentuale della densità e della concentrazione del prodotto che deve essere uguale ai parametri stabiliti dalla ricetta di laboratorio.
