Oltre alla pasta all uovo, premiata come la migliore pasta italiana per il rapporto qualità/prezzo ed eletta dai consumatori Sapore dell anno 2016, l azienda produce anche pasta di semola di grano duro, pasta all uovo biologica e pasta biologica al farro. Starting out as a small artisan workshop, year by year the group has grown to scale the heights of the domestic and foreign markets; today it has 45 employees and a production of around 250 quintals of pasta every day. Besides its dryed egg pasta, voted the Italian pasta with the best quality/price ratio and awarded the title of Flavour of the Year by consumers, the company also produces pasta made from durum wheat semolina, organic egg pasta, and organic farro pasta. The greatest achievement of the Maccari family, currently owning and managing the company, has been that of having kept the links with its territory of origin intact, producing a pasta like the one which so many Marchigian grandmothers have handed down to their grandchildren.

But our processing methods are what make our product unique: to keep to grandmother s original recipe we use 33% egg in every mixture, no water or additives, extrusion through brass dies, essential for obtaining a rich and porous pasta, and we guarantee slow drying over 22 hours at low temperature, so the flavour of the pasta remains unaltered. Lo studio riguarda tutti gli aspetti che contribuiscono alla determinazione dei discriminanti di qualità del prodotto, mediante analisi microbiologiche e definizione di caratteristiche chimiche, chimico-fisiche, organolettiche, ecc. sul prodotto in oggetto. The scientific systematic study of this research project on the La Pasta di Camerino has the goal to compare the characteristics of La Pasta di Camerino egg pasta with other commercial egg pastas, to give experimental evidences of the parameters that enhance a low-temperature-high-quality egg pasta. The scientific work looks for quality discriminants parameters by means of microbiological analyses and chemical and physico-chemical characterizations. It has been determined by a TGA and by a DTG (TGA first derivative) curves in the temperature range C. The bound water is strictly related to the proteic matrix and to the internal structure of the egg pasta.
