È un composto ottenuto dalla fermentazione naturale di farina e acqua nel quale sono presenti microorganismi, i quali si riproducono cibandosene e trasformano gli zuccheri in anidride carbonica, producendo così la lievitazione della pasta. Le qualità principali apportate dalla lavorazione del Lievito Madre sono molteplici: mantiene a lungo le qualità organolettiche del prodotto come Fragranza, Sapore e Profumi, dona una naturale sofficità e rende digeribile il prodotto. Una lavorazione purtroppo col tempo abbandonata per la complessità nella produzione e nella conservazione del lievito naturale. Dal 1932 la famiglia Fraccaro continua invece, con entusiasmo e convinzione, questo percorso storico. A special ingredient: sourdough. The production process with sourdough and the preservation of the natural yeast are more complex, which is why they were gradually abandoned over time.
